  2. Add onion and ginger; sauté until lightly golden.
  3. Stir in tomatoes, tomato paste, and capsicum; cook 3–5 minutes until reduced.
  4. Add chili powder, coriander–cumin powder, and garam masala; stir 30 seconds.
  5. Add crumbled firm tofu; sauté 3–4 minutes until coated and hot. Salt to taste.
