Ingredients
- 252 g chopped onion
- 15 g cooking oil
- 245 g chopped tomatoes
- 89 g bell pepper (capsicum), chopped
- 2 g cumin seeds
- 10 g fresh ginger, grated
- 30 g tomato paste
- 3 g garlic–chili paste
- 3 g red chili powder
- 5 g garam masala
- 10 g coriander–cumin powder (dhana jiru)
- 375 g firm tofu, crumbled
Instructions
- Heat oil over medium; bloom cumin seeds until fragrant.
- Add onion and ginger; sauté until lightly golden.

Stir in tomatoes, tomato paste, and capsicum; cook 3–5 minutes until
reduced.

Add chili powder, coriander–cumin powder, and garam masala; stir 30
seconds.

Add crumbled firm tofu; sauté 3–4 minutes until coated and hot. Salt
to taste.
